3 Eggs
1 C Caster Sugar
3/4 Cooking Oil
1 1/3 C Plain flour 
1/2 t salt
1 1/3 t bi-carb soda
1 1/3 baking powder
1 1/2 t cinnamon 
2 C grated carrot
1/2 C roughly chopped walnuts 
1 t Vanilla 
Icing: 
125g Cream Cheese
1 C Soft Icing Sugar 
1 t Vanilla 
Method 
Grease and line tin 
Beat eggs and sugar until frothy
Add oil and stir in sifted dry ingredients 
Lastly fold in carrots, nuts and vanilla 
Bake for 1 hour.
