Cauliflower Rice

1 large head of cauliflower, trimmed, cut into florets
1 tablespoon coconut oil
2 small red chillies, seeded, thinly sliced
2cm piece of fresh ginger, peeled, finely chopped
2 garlic cloves, finely chopped
2 tablespoons desiccated coconut
4 green onions, thinly sliced
2 tablespoons fresh chives, chopped

Process cauliflower in a food processor until very finely chopped.

Heat coconut oil in a large, deep frying pan over medium heat. Add chilli, garlic and ginger and cook, stirring for 2 minutes or until chilli has softened.

Add cauliflower and desiccated coconut. Cook, stirring occasionally, for 20 minutes or until cauliflower is tender and golden.

Stir in green onions and chives. Season with salt and pepper.
